Read on below.
Leon & León fries is the first to introduce low-carb fries
It starts with the Dutch writer Leon de Winter who in 2012 had to follow a mandatory low-carb diet from his doctor. Because he had to give up his beloved fries, he started looking for low-carb fries as an alternative. He discovered that these cannot be found both on the internet and in the retail trade. What he could find are the carrot fries. However, these do not resemble the potato fries that they are used to in terms of structure, taste and color. That is why, together with his cousin and heart surgeon León Eijsman, he has decided to develop low-carb fries and to market them as a joint mission.
They went looking for a company that can develop low-carb fries. They found HZPC potato makers via the internet. HZPC is among the world leaders when it comes to the development of potato varieties. As it turns out, low-carb potato variety ‘Colomba’ has already been developed by HZPC. Therefore, in cooperation with HZPC, low-carb potatoes are grown, so that fries can be made for Leon & León.
Low carbohydrate potatoes from ‘Colomba’
I have already mentioned that Leon & León fries are specially made from low-carb potatoes from Colomba. These are fiber-rich potatoes that retain more water. As a result, they contain fewer carbohydrates and calories than standard French fries potatoes. The fries are also referred to as the “French fries from Metslawier”. This is named after the village in the far north of Friesland where the fries originally came from. The natural coating of the carbohydrate potato ensures that it can be prepared as fries. In addition, it does not need extra salt because it naturally already has it.
The inventors Leon de Winter and León Eijsman used their first names as a brand name for their low-carb fries. Leon & León is a collaboration between HZPC Holland, De Korrel Beheer, and The Rocket Science Kitchen. For the time being, the low-carb fries are only available in the supermarket. If successful, it will also be launched in the food service market.
The low-carb fries have been specially developed for preparation in the Airfryer. What does this mean? This means healthier deep-frying with hot air.
