Watermelon carpaccio with feta

This is a wonderfully refreshing vegetarian starter or as a snack and very easy to make. Go to my recipe.

Watermelon carpaccio with feta


1 watermelon

25 gram rucola

50 gram feta cheese

2 sp balsamic vinegar

1/2 tbsp honey

Pinch of salt


  1. Cut the watermelon in half. Then you cut away the hard shell.
  2. You cut the watermelon flesh wafer-thin with a knife and divide them over 4 plates.
  3. Place the argula in het middle of the watermelon carpaccio and then crumble the feta cheese on top.
  4. Mix the balsamic vinegar, honey and salt in a bowl and divide the dressing over 4 dishes. Enjoy your meal!
