Stuffed avocado with salmon and quinoa
A festive appetizer or just in between. It remains a delicious snack. If you want to try it out, see my recipe below.
Ingredients for 2 persons:
- 50 grams of quinoa
- 100 grams of fresh salmon
- 2 small avocados or 1 large avocado
- 1 tablespoon sunflower oil
- 1 small red bell pepper
- 1 mespot wasabi
- 1 pinch of salt fresh
- lime juice (may also be lemon juice)
- 1/2 teaspoon of Japanese sesame seeds (may be black or white)
- 2 tablespoons of Mirin (sweet rice wine)
- 1 tablespoon of Japanese soy sauce
- 1 full tablespoon of mayonnaise (or yogurt)
- 1/2 teaspoon Kameya wasabi furikake (can you buy at a toko)
- 25 grams of lettuce
- decoration: edible flowers
Preparing method:
- Prepare the Quinoa according to the instructions for use. Once it is done, drain and allow to cool.
- Rub fresh salmon with lime juice on both sides and then rinse with cold water. Then droppings on both sides. Cut fresh salmon into equal small blocks. In the meantime, make marinade with Mirin and Japanese soy sauce. Then marinate salmon with it and put it in the fridge for 10 minutes to allow it to withdraw.
- Remove the seeds from small red peppers and rinse them clean. Then cut into small blocks.
- Put the frying pan on the fire and sunflower oil until it is well heated. Then put salmon pieces on it, do not throw away the marinade. Bake 1 minute on both sides with the addition of other marinade. Then add your paprika and quinoa and then stir 1 minute. Then let it cool down.
- Halve and stew Avocado, but leave it in the skin. Rub the inside with lime juice so as not to have a brown color. Then fill with a mix of salmon, quinoa and paprika.
- Making wasabi mayonnaise with wasabi, mayonnaise (also yoghurt), salt and Japanese sesame seeds. Then fill in a cone bag. (You can also buy ready-made wasabi mayonnaise)
- Suggestion of how to plate food. Salad mix on plate. Remove peel of stuffed avocado and place on plate. Wasabi mayonnaise over with dried Kameya Wasabi Furikake. And place edible flowers on them but you can also leave them out. Enjoy it!
